yo, 135mm spacing will be fine, just limits the hubs you can use a bit, but if you're wanting to run disc and fixed that also limits the hubs you would be using. Disc front/canti rear can also be totally fine, if you're running it fixed anyway I don't think your braking power at the back is going to be a big deal, and cantis are ace anyway. Aesthetic might be a thing but give a fuck, my MTB is going to be V rear and disc front.
If you want disc fork Kona project 2 forks are really nice, though I don't believe they make them any more so it might be an ebay kinda thing.
I reckon going pompetamine is a better choice long term, if you ever wanna run hub gear etc it makes your life easier, and short term it's a bit of a price jump, but for a much more versatile frameset in the long run I reckon it's a good choice. You might have a hard time finding an already built wheel, but you have friends who build wheels who may do it in exchange for some delicious treats/hangs (me, I mean me).
And as I said when we were having tea, I recommend mechanical disc brakes, Avid BB7s are good.
As Indra says Archetypes are a good choice (all black=swag but braking surface is there if you ever want it, alternatively some 29er disc rims could work). The Surly hub is a good choice, and for front I personally would go for some kind of burly MTB hub (can't think of a cheap-ish one off the top of my head).
Idiot's guide to disc brakes is hang out with an idiot (e.g. me) and we can do it together.
If you're just running square taper cranks then generic shimano bb will be totally fine (I think it's the BB-UN55), you could go fancier but meh. Can go for as fancy or unfancy headset as you like, I reckon not too fancy is a totally fine and sensible thing to go for. Generic cane creek or something.
