Brakes: HY/RD discIf you can, I would recommend going for the SRAM S700, it's a non-series 10 speed full hydraulic system, they're £400 (shifter and brakes, not including rotor), considering it would set you back over £200 for a pair of HY/RD and £185 for the Apex shifter, it's not too pricey for a full hydraulic.
If you're still set on HY/RD, make sure to have compressionless housing, Jagwire do some for decent monies.
Wheels: H+SON Archetype to Novatec D041SB / D042SB
Archetype have braking surface, you don't need those, one of the main benefit of disc brakes is that you can get a much lighter rims for not a lots of money due to not required extra material for the braking surface, an example is the Pacenti CL25 that weight less than 400g and £40.
Tyres: 28c Panaracer Pasala
Mudguards: SKS Longboard 35mmYou'd need bigger than 35mm, that size is idea for road bicycle with tight clearance, 28mm is the max you can go with 35mm, go for at least 45mm which can handle up to 32mm tyres.

I can't find SRAM S700 in stock online but from the few links I did stumble across it looks a bit too pricey for me. I was looking at spending around £500 max for the aforementioned groupset and brakes (taking into consideration I can sell the rim brakes from the group).

I know this, but they look so good. I'd actually like to save a bit of cash on the wheel setup so I'll certainly consider alternatives. I could especially do with saving some weight as the Straggler frameset is a heavy bugger. The Pacenti CL25 you mentioned would save me a little of both and would look nice next to the MTX33s I have on my Brooklyn. So thanks again. I'll have a think.
I've just purchased this Surly Straggler frameset and I need to build it up. :)
As my only geared bike, I want to make it a good all rounder. It'll be used mainly for a 20mi round commute each day but I hope to do the occasional spot of microadventuring or even a bit of single track (with a few tweaks to the setup).
I'm thinking of the following spec as its main setup - all black, of course:
I need to find a nice seatpost/stem combo that offers 10mm setback post and 100mm ~8deg stem.
If anyone has any feedback or recommendations for this build then I'm all ears!
