I just got back from a 9 day tour from Amsterdam to Ireland on my alu/carbon road bike, doing pretty much what you've described above. I bought a QR based pannier rack and a handlebar bag. There was about 7 kilos in each pannier plus a sleeping bag (which I never bloody used). There was no tent involved however.
I think the important thing is to research the weight limits of your wheels. You and all the stuff you want to carry needs to come in below 100kgs because this is the usual wheel limit.
p.s. The rack is a Axiom Streamliner Road Deluxe Rear Rack. However the brake mount snapped on the penultimate day so not sure I'd recommend it...
