I read somewhere that when you're building bikes there's good weight and bad weight.
Adding good weight (e.g. stickers) makes you faster, whereas bad weight (metal forks, saddlebags and stuff) makes you slow. Pro mechanics know all about this and have designed special "good weights" for the pro bikes - I think that's why they so fast.

(I must admit I'm not an authority on these things, I don't do it professionally - I've just picked up a few bits and bobs listening in to the experts at my local bike shop).
