Just keep an eye on the top/bottom end for whatever combo you go for - mine has a similar bottom end to the 48/36 11-32 I was running before, lost a bit of the top but willing to sacrifice that for smoother shifting.
As long as you're not going road double and a tiny cassette, you'll probably be fine!
If you're not touring the alps, with 4 full panniers and the kitchen sink, that'll give you enough range. I'm running 32/42 and 11-28 (8 speed) low enough at the bottom end, nice shifting at the front and I conserve energy by coasting down hills.
