That's quite low compared to the blue GT up there.
I would keep it. Maybe you'll find correct 700c forks. Wouldn't be hard to find similar GT forks and do a DIY paintjob either.
Some of the forks on GTB's were stock steel GT forks. Mine have eyelets, a brake hole and are a boat anchor in weight. Maybe you could find some of those. Good luck either way.
