In principle its (reasonably) sound thinking but I think you're being quite naïve - like Arsenal after they sold Henry.
Having one of the top 3 strikers in the world who can score from nothing creates pressure on the opposition that no amount of defensive improvement or middlingly talented midfielders will solve.
Take the 25+ goals away from that and I think you could be in for a bit of a shock. As Dov said - game dynamics are changed by goals and a big part of Liverpool's approach last season was to put early pressure on the opposition by scoring... Its going to be much harder for them to do that now, especially in Europe AND Prem unless they sort out another striker.
