I wouldn't say my 'ratatouille' is 'great' but it's cheap and quick.
I cooked our glut of home-grown tomatoes in the microwave, after cutting them up, added Sainsbury's frozen chargrilled Mediterranean vegetables, added olive oil, Italian herb seasoning, salt, pepper and lemon juice, then stirred & zapped in the microwave.
Anyone got any tips for a great ratatouille? It's my packed lunch of choice at the moment (usually with mackerel and cous cous)
