Dawes Super Galaxy Touring Tandem

Good read, my girlfriend is vying for us to get a tandem and do exactly the same as you. I'm about 30cm taller than her though, so finding something that will fit might be tricky

Sizing isn't a problem actually, modern tandem have a much longer top tube on the rear, allowing a lots more flexibility in term of fit, so if your girlfriend is shorter than you, you'd only need a very long stoker stem.
