I actually did it (I work round the corner from a big Evans shop); Veloce on a bianchi; Ultegra 6800 on a Cannondale Supersix and Sram red on that Evo ^^
Evans will let you order and test ANYTHING in any size. Apart from all the criticism that they (and other chain shops) get this is actually a good thing. I think its also because they themselves dont know the difference most of the time.
