I started baking some months ago but have not yet heard of this (just use regular bowl to prove as of now).

It doesn't do anything that a bowl doesn't do, but it will provide a nice pattern to the sides of the bread which does improve the aesthetic appeal. This is especially nice if you bake a loaf to give to someone.

Make sure you get a fucking banneton, normal bannetons are rubbish.

I haven't been to the place on Mare st yet but when it was at birthdays I fully rated their chicken sandwich. Delicious. Everything else was good too.

Education is the way forward. Educate them so that they will pass on the skill. If that doesn't work...beat them with a wooden ruler so they will never make the mistake again.

In their new incarnation I don't believe they have the chicken sandwich on the menu. It was the best thing to eat when they were at Birthdays. Bird chicken is good for what it is and is very crispy, but is expensive compared to somewhere like chicken shop.
