The right amount of head just tells you it's the right amount of fizzy. If there's no head often your beer will taste flat, but obviously it varies. I think it's just association, we think 'if it looks right it'll taste good'. I bet if you took the head off someone's beer then gave it to them they might say it tasted different. I certainly wouldn't trust a guinness with no head. Putting a head on a beer just for the way it looks is a bit like waxing oranges.
