I think clockwise is making a serious point.
As mostly self employed they aren't working unless there is a package in the bag.When the bag is empty they are just people with bikes.

Can finish 6ish most days, lots of the bigger companies keep a couple on after that till 9-10 and even through the night on standby.
You finish when your controller says so/has no more jobs for you/you have made enough money to eat.
It is not a job of regular hours, no day will be the same.

I used to finish when either the controller couldn't be arsed to carry on calling me out, or I couldn't be arsed to keep listening to him. As for starting, as clockwise said, whenever there's something in the bag.
If time had to put on it. 8-5 most days. Nobody gave a shit about your hours but yourself. -

I worked a standard 8.30-6 day with the last run of the day a regular pick up at 5.45 but then i worked in Manchester

go to the Moving Target forum (which I assume you know about if you are wanting to film London bike couriers) and tread carefully. Couriers as a rule dislike media as they are usually negatively represented (loads and loads and loads of people always want to do 'little pieces' on couriers) and this often leads to a negative response at first, especially as there are a number of people in that community who spend a lot of time an effort getting couriers to be portrayed in a better light and be less exploited than many of them are.
Outline your motivation clearly and maybe make a donation to the London Bike Messenger Association (which I aslso assume you know about due to your interest in couriers)
