Vittoria Open Corsa CX 20c for the front (assuming Hed3), 23c rear. Faster than a GP4000s and with a bit more puncture resistance than the real minimalist clinchers. Or Conti Supersonic front and use a different front wheel to ride there. With latex tubes, obvs.
