  • Higher protein content than nearly all other breeds, i.e. it's a very 'hard' wheat, but low in gluten, so it's useless on it's own for bread making.

    Spelt has a bit more protein and happily bakes into a loaf on it's own.
    Some may argue that it's not a wheat though.
